An Impressive Entrée - The Chef's Signature Dish

The entrees arrived and Jennifer convinced us that we could not pass up the grilled Colorado rack of lamb, the chef’s “signature dish.” So we ended up tasting the salmon, the lamb, and the medallions of pork. I found that, although I love good salmon, the chef’s expertise with lamb and beef was not to be bypassed. I highly recommend the grilled Colorado rack of lamb in pepper crust. The lamb was accompanied by a puree of garlic Anasazi bean with winter root vegetables served with rosemary lamb jus. My friend savored the medallions of Iowa pork tenderloin. My taste of this treat was memorable as well. The pork was served with zinfandel braised onions, sweet potato-pinon spheres in a red chile bourbon syrup. We experienced first-hand the creativity of Chef Rios in weaving together continental dishes with New Mexican touches. These are dishes you will experience nowhere else. They are uniquely Chef Rios’ works of art.

I highly recommend that you spend at least one evening dining at The Inn of the Anasazi Restaurant when you visit Santa Fe. Even the most discriminating diner who has enjoyed meals at the finest restaurants in New York and San Francisco will be impressed with the offerings at The Anasazi.

The 92-seat restaurant serves an exciting menu that honors the culinary legacies of the Southwest — foods of the earth from the Native American, foods of the soul from the New Mexican and foods of substance from the American cowboy. Chefs take advantage of an abundance of locally grown fruits and vegetables, as well as organic meats and poultry, to create culinary delights at this award-winning restaurant. Breakfast, lunch and dinner are served daily and The Restaurant features a Sunday brunch. Reservations are recommended.
